Hot coffee, whisky, sugar and cream are the main ingredients in the caffeinated alcoholic beverage Irish Whisky. Sometimes cream liqueur is included as well. Through the cream, the coffee is consumed. Different iterations of coffee cocktails date back at least 100 years before the now-classic Irish coffee. The Pharisäer and the Fiaker, two coffee-based drinks served in glasses and topped with whipped cream, have been available in Vienna coffee shops since the middle of the nineteenth century. Around that period, the former was also well-known in northern Germany and Denmark. Around 1900, a number of other variations on the subject, such as the Kaisermelange, Maria Theresia, and Biedermeier-Kaffee, were also available on the coffee cocktail menu in the cafés of Vienna. The present recipe is said to have been created in a number of locations in the 1950s. One variation is credited to Joe Sheridan, the head chef at the eatery and coffee shop located in the flying boat station at Foynes Airbase. He gave some departing passengers whisky in their coffee in 1942 or 1943. Travel journalist for the San Francisco Chronicle Stanton Delaplane claims to have brought Irish coffee to America after tasting it at Shannon Airport. According to his account, he collaborated with the San Francisco establishment Buena Vista Cafe to begin serving it on November 10, 1952. Later, Sheridan moved abroad to work at Buena Vista Cafe. Black coffee is poured over Irish whisky and at least one level teaspoon of sugar, which is then thoroughly mixed in. The back of a spoon is carefully covered with thick cream, which is then slowly raised until the entire layer is afloat. The spoon is originally held just over the surface of the coffee. Although whisky, coffee, and cream are the three main components of all Irish coffees, there are some differences in how they are made, including the type of coffee used and the brewing techniques.
